Gabi Elliott

Research Assistant

Gabi Elliott (she/her/hers) earned her Bachelor of Social Work from Colorado State University and is a current Master of Social Work student with a concentration in Social Justice and Diversity from the University of Toronto. As a social worker, she has broad experience in Gerontology, Mental Health and Wellbeing, and Nonprofit Policy and Grant Development. As a researcher, her passions lie in food security, food sovereignty, and food dignity as pillars of the Global Food Justice Movement. Gabi’s BSW Honors Thesis “Edible Justice: Exploring Cultural Inclusivity, Medicinal Eating, and Access in Contemporary Food Systems,” was published in Mountain Scholar Colorado in winter 2024, exploring themes of pervasive whiteness as an embedded statute of our societies
in addition to settler-colonialism, capitalism, and neoliberalism. Throughout her wide range of experience, she aims to be a constant advocate against injustice and to support the holistic healing of marginalized communities.

Aside from professional ventures, Gabi spends her time cooking, reading, and waiting for Halloween.
